Here’s an uncomfortable truth about the Indian honey aisle: a lot of what’s sold as “pure honey” isn’t. Investigations over the years have repeatedly found honey cut with cheap sugar syrups engineered to slip past standard tests. For an honest beekeeper, it’s maddening. For a buyer, it’s confusing. So here is a straight guide to telling real honey from the rest — starting with the label.
What the FSSAI standard actually means
In India, honey is a regulated food with a defined standard under FSSAI. A licence number on the label (ours is 21326134000535) means the producer is registered and the honey is meant to meet limits on things like moisture, sugar composition and freshness. It’s a floor, not a guarantee of greatness — but a jar with no FSSAI number is a jar to walk away from. Look for it, and look for a real batch number and packing date too.
The tests that matter (in plain English)
- Moisture: real, ripe honey is low in water. Too much means unripe or watered honey that can ferment.
- HMF: a marker that rises when honey is overheated or old. Low HMF points to raw, freshly handled honey — which is exactly why we never heat ours.
- C4 sugar test: detects cane/corn sugar added to honey. The classic adulteration check.
- NMR profiling: an advanced “fingerprint” test that catches the modern designer syrups built specifically to fool the older C4 test. The gold standard today.
The short version: reputable honey can be tested and stands behind its numbers. If a seller can’t tell you anything about how their honey is tested, that silence is an answer.
Myth-busting the kitchen “tests”
You’ve probably seen the viral tricks — the water test, the thumb test, the flame test, the ant test. Treat them as entertainment, not evidence. None of them reliably distinguishes real honey from a good fake; genuine honeys vary hugely in thickness and behaviour depending on their floral source and moisture. A light rubber honey and a thick forest honey will “fail” each other’s kitchen tests while both being perfectly pure. Real proof comes from lab analysis and a trustworthy source, not a glass of water.
Crystallised honey is not fake honey
This one deserves its own heading, because it’s the most common misunderstanding of all. When honey turns thick, pale and grainy, many people assume it has “gone off” or has sugar in it. The opposite is true. Crystallisation is a natural property of real honey — especially raw, unheated honey and honeys high in glucose, like rubber honey. It’s often a reassuring sign of authenticity. To return it to liquid, simply stand the jar in warm (not hot) water. Ironically, honey that never crystallises may be the more suspicious jar.
The simplest test of all: traceability
Every check above helps, but the strongest safeguard is boringly simple — know where your honey comes from. Can the seller tell you which bees made it, where, and in which season? Is it single-origin, or an anonymous blend from who-knows-where? Honey you can trace to a hive is honey you can trust.
