Why has my honey crystallised?

It has not spoiled. It has done the one thing that industrial honey is engineered not to do.

Of all the messages we get, this is the most common one — and it almost always arrives with an apology attached.

Sorry to bother you, but the honey has gone hard. Has it spoiled? Should I throw it away?

No. Please don’t. What has happened in your jar is the single most reassuring thing raw honey can do.

What is actually happening in the jar

Honey is not really a liquid. It is a solution — mostly sugar, with only about seventeen or eighteen per cent water holding all of it together. There is far more sugar dissolved in that water than water can comfortably hold, which makes honey what a chemist would call supersaturated. It is a liquid living slightly beyond its means.

Two sugars do most of the work. Fructose stays dissolved quite happily. Glucose does not. Given time, glucose comes out of solution and forms tiny crystals; those crystals grow, and the honey turns thick, pale and grainy.

That is all crystallisation is. Not spoilage, not adulteration, not age. Glucose doing what glucose does.

It needs somewhere to start, though. A speck of pollen, a fragment of beeswax, a microscopic air bubble — each becomes a seed for the first crystal. Which brings us to the part worth understanding.

Why raw honey sets and supermarket honey does not

It is worth asking why a bottle of commercial honey can sit on a shelf for two years and stay flawlessly clear.

Two things have usually been done to it. It has been pasteurised, which dissolves every existing crystal and every micro-crystal too small to see. And it has been ultrafiltered — forced under pressure through a filter fine enough to strip out the pollen, the wax and the fine particles.

The result is a honey with nothing left to crystallise around. It stays liquid more or less indefinitely, and it looks beautiful.

It also has no pollen left in it. Pollen is how a laboratory establishes where a honey actually came from — remove it and the honey’s origin becomes impossible to prove. That is not an accidental side effect of processing, and it is worth knowing when you are comparing prices.

We strain ours gently, through mesh, under gravity. That takes out wax and debris and leaves the pollen where it is. So ours sets. It is meant to.

Which of ours will do it, and when

Not every honey crystallises at the same speed, because not every nectar carries the same ratio of glucose to fructose.

Rubber Flora Honey is the quickest of ours. Rubber nectar is unusually rich in glucose, so a jar will often begin to set within a few months, sometimes sooner. If your rubber honey has gone pale and firm, it is behaving exactly as it should. Read about rubber honey →

Wild Forest Honey takes longer. Multifloral honey from a shifting forest canopy carries a more mixed sugar profile, so a jar may stay runny for a year, or turn slowly and unevenly.

Cheruthen rarely sets at all. Stingless bee honey is thinner and higher in both moisture and fructose — which is, incidentally, one of the ways you can tell real cheruthen from ordinary honey sold under the name. What is cheruthen? →

Temperature matters too, and this one catches people out in Kerala. Crystallisation is fastest at around ten to fifteen degrees — which is to say, in a refrigerator. Honey does not need refrigerating. A cupboard is better, and a cupboard away from the stove is better still.

How to bring it back

Gently. This part matters more than it sounds.

Stand the closed jar in a bowl of warm water — comfortable to your hand, not hot — and leave it twenty minutes or so. Stir, and repeat if it needs it. That is the whole method.

What to avoid: boiling water, a pan on the stove, and above all a microwave. Sustained high heat is what strips a honey of the enzymes and aromatics that make it worth buying in the first place, and it drives up a compound called HMF, which is one of the markers FSSAI uses to check whether a honey has been overheated. Or simply leave it. Set honey spreads beautifully on bread, behaves perfectly well in a marinade, and dissolves in warm tea exactly as it always did.

What crystallisation does and does not prove

Here we would rather be precise than flattering, because a good many people selling honey are not.

Crystallisation tells you that your honey has not been ultrafiltered and has not been pasteurised. That is genuinely useful, and it is one of very few things you can check in your own kitchen without a laboratory.

What it does not do, on its own, is prove purity. A determined adulterator can produce a honey that sets. So treat crystallisation as strong evidence of raw, unprocessed honey rather than as a certificate — and read it alongside the things that do settle the question: a batch that is dated, a source that is named, and a test report you are allowed to see.

That is the honest version. Anyone telling you that crystallisation alone proves honey is pure is overselling a good fact.

The one thing that actually is a fault

If a jar smells yeasty or faintly alcoholic, or has active bubbles rising through it, that is fermentation — and it means the honey went into the jar carrying too much moisture. That is a real problem, and a different one entirely. Tell us, and we will replace it.

Your honey has not spoiled. It has done the one thing that industrial honey has been engineered not to do. Warm it gently if you would rather it were runny, or eat it as it is — and take it as a small, quiet confirmation that what you bought came out of a comb rather than a factory.
